Gluten Free Keto Shortbread Cookies
INGREDIENTS:
- 1/4 cup unsalted butter room temperature
- 1/2 cup plus 2 tbsp monk fruit or granulated sweetener of choice
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups almond flour
- 1 pinch salt
INSTRUCTIONS:
- Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper, and set aside.
- In a large mixing bowl, add your butter and sweetener. Beat until creamy – it is easiest to use a stand or hand mixer.
- Add in your vanilla and eggs, one at a time until smooth. Gently fold in your almond flour and salt, mix until combined.
- Using a large cookie scoop, form 12-15 dough balls and place on your prepared baking sheet. Press each ball down into a cookie shape and create holes in the middle of your cookie with the prongs of a fork.
Bake for 17-20 minutes, or until the edges are just starting to turn a golden brown. Remove from oven and allow to cool completely and enjoy!
