Creamy Cauliflower with Crispy Onions
This is great if you are in the mood for comfort food and I promise you won't even miss the carbs/sugar....absolutely delicious.

Ingredients:

2-3 cups of frozen cauliflower

1 cup of chicken or vegetable broth

1/2 cup Parmesan + mozzarella cheese blend

1 tbsp of "better than bouillon" paste

1 tbsp unsalted butter

2 tbsp olive oil
-
chili flakes, black pepper, onion powder, garlic powder, Italian seasoning, and salt to taste

3/4 white onion
-
2 strips of turkey bacon (optional)
Directions:

pulse blend the frozen cauliflower until it's fine (make sure it's completely frozen, otherwise it will stick to the sides of blender and will not blend properly)

cook down cauliflower with butter, olive oil, and spices until water has steamed out (5-10 minutes) on medium/high heat

add in the "better than bouillon" and chicken broth (you can also add a splash of heavy cream or milk for added richness) and then add the cheese mix *reduce heat and simmer for 10-15 minutes on low heat until desired thickness is reached
Toppings (optional): *Fry 3/4 white onion in canola oil on med/high heat and toss until golden brown 10-12 minutes (throw in some turkey bacon with the onions to crisp it up if you'd like this as a topping as well!) *strain all of the excess oil from onion topping, add a pinch of salt
