Spinach Queso Quiche
This was one of the best keto dishes I've made!
Ingredients:
Filling:- 1 large egg
- 1/2 cup half and half
- 1/4 cup chicken stock
- 3/4 cup white cheese (I used Asiago and Parmesan)
- 1 tbsp "Better than Bullion"
- 6-7 cups fresh spinach
- 1 white onion
- 3/4 cup fresh scallions
- 2 tbsp olive oil
- Red pepper flakes
- onion powder
- garlic powder
- salt to taste
Pie crust:
- 2 cup almond flower
- 5 tbsp pyshillium husk
- 5 tbsp butter
- Garlic and onion powder
- Salt to taste
Directions:
- Caramelize white onion in pan med/high heat 20 min, add scallions and a splash of chicken broth + Olive oil.
- Throw in spinach after turning off heat and allow it to reduce in volume
- combine egg, half and half, chicken stock, spices, and cheese and set aside
- combine pie crust ingredients and press down on bottom of pan
- pre-bake crust for 10 minutes at 350 F *pour vegetable over pie crust and then pour wet egg mixture on top
- bake at 350 for 15 minutes, sprinkle with cheese and broil at 500 for 3 minutes
- (I placed a sliced up keto tortilla around the edge of the pan because I used a cheesecake pan and didn't want the filling to spill out, but this is not necessary)
