Quick Cheesy Sausage/Bacon Biscuits
Ingredients:
(makes 6 biscuits, double or triple for multiple mouths or meal prep/freezing)

1/3 cup (36g) almond flour

1/2 tbsp (7g) butter, melted

1 tsp baking powder

2 tbsp (10g) mixed color hot peppers or jalapeños

2 tbsp (10g) onions, diced

5 tbsp (75g) egg whites, raw (For fluffier biscuits and a less eggy flavor)

1/6 lb (75g) sausage (so 1/6 of a standard pack) or 6 slices bacon

1/2 cup (60g) cheese, I use a mix of cheddar and mozzarella

Seasonings of choice (I recommend salt, pepper, mixed herbs and 1/4 tsp garlic)
Instructions:

Preheat oven to 350°F/175°C

Pan fry sausage or bacon with onions and peppers, breaking up sausage with spatula and let cool. If using bacon cut into bacon bits afterwards.

Melt butter and let cool

Combine almond flour, baking powder, and seasonings in a bowl. Pour in melted butter and mix thoroughly

Pour in cooked sausage/bacon into mix. Add in cheese, saving some to top cookies with, and thoroughly distribute

Add in egg whites at this step

Spoon 6 balls of dough onto parchment paper lined baking sheet as evenly as you can, making sure to spread out

Slightly flatten dough balls out with back of spoon, then top each with left over cheese

Bake for 10-12 minutes at 350°F. Check around 10 for brownness. Cook no longer than 12.
