Nashville Hot Chicken & Mashed Cauliflower Bowl

"This was delicious and filling! Really just kind of threw it together, but was pleased with the result. I live in Nashville, so this is the recipe for hot chicken that I know and love at my house."
Instructions:
Cut up some chicken into bites. I like to get either boneless, skinless thighs or tenderloins. Get whatever kind of chicken floats your boat!
Toss the chicken in equal partsâŠ
cayenne pepper
chili powder
cumin
paprika
garlic powder
onion powder
- I think equal parts works best for balance. Donât forget that this also depends on your preference of spice/flavor and the amount of chicken used. For reference, I used about 1.5 pounds of tenderloins and I did 1 tablespoon of each.
- I find that I donât need to add extra salt with all the seasoning, but I do like to add some Lawryâs seasoned pepper⊠itâs just really tasty. Then I also added without measuring some crushed up pork rinds and a little bit of almond flour and a sprinkling of baking powder to crisp it up.
- Seasoning is relative to your tastes, season it however the hell you like!
- Then I air fried at 400 for 8 minutes to my desired crispness. Crispness is relative to your taste, what is not is that it needs to be at least 165° internal temp so that you donât die!
- In the meantime, I microwaved a steam bag of cauliflower. If you want to be a purist and boil a floret and all that jazz, you do you fam. But this literally took 6 minutes and cost a dollar⊠when it was done I threw those steamed veggies in the blender and mashed it away. I didnât add anything, but you can feel free to add whatever the heck you like. Sour cream, cream cheese, heavy cream, etc.
- Spooned the veggies into a bowl. Sprinkled with parsley and shredded cheddar cheese. Added the chicken on top, drizzled some ranch dressing and freeze dried chives.
