Ingredients
- 12 slices Prosciutto
- 1 teaspoon fresh rosemary finely chopped
- 2 tablespoons green onions chopped
- 1/2 cup cheddar cheese shredded
- 1 cup Grana Padano grated
- 6 large eggs
- 1 cup heavy cream
- Sour cream - for garnish
Instructions
- Preheat the oven to 350°F (180°C)
- Lightly grease a cupcake tin with butter or oil.
- In a bowl, mix the eggs and cream together. Stir in the cheeses, reserving a little Grana Padano to sprinkle on top of each cup.
- Stir in rosemary and green onions.
- Carefully take your prosciutto strips and line each segment of the cupcake tin to form a cup.
- Fill each cup up to a maximum of 2/3rd full with the egg mixture.
- Sprinkle remaining Grana Padano on top and place into the oven for 15 minutes or until golden.
- Leave to cool for 5 minutes before removing from the tin, enjoy!
- Top with sour cream and green onions.
