Almond Meal Sauteed Zucchini - 15 Minute Goodness

INGREDIENTS:

  • 2 medium/large zucchini (quarter cuts)
  • 2 tablespoons Almond meal
  • Salt and pepper (1/2 tsp - to taste)
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon red chili flakes
  • Olive oil 2 tablespoons
  • Fresh chives 1 teaspoon (chopped)

INSTRUCTIONS:

  • Cut two zucchini in quarter 3 cm cubes and add in the large bowl.
  • In the same bowl add almond meal, salt and pepper, paprika, red chili flakes and mix well.
  • In a large frying pan add (2) Tbsp olive oil and fry zucchini in two batches for 6-8 minutes at medium flame or until zucchini turns slightly brownish.
  • Garnish with dried basil and fresh chives and serve.
